Good old fashioned comfort food. Breakfast sausage in a thick creamy gravy. I’ve tried this with turkey sausage, too, it’s good but you can’t beat that pork flavor. Topped with green onions just sharpens everything right up. Enjoy!
Sausage Gravy
1lb breakfast sausage
2T fat (butter or oil)
2T flour
2c almond milk
1t salt
1 1/2t pepper
3 green onions
In a large skillet, fry 1 pound of breakfast sausage, 5-8 minutes, stirring occasionally. Until cooked through.
Add 2T butter (or fat of your choice) stirring until melted.
Add 2T flour, 1t salt, and 1 1/2t pepper, mix well. Cook for 2-3 minutes.
Slowly add 2c almond milk unflavored (or cow, soy, oat, whichever you like), whisking as you go to incorporate all.
Simmer for 5-8 minutes, stirring occasionally, until the sauce thickens.
Serve over biscuits or toast, sprinkle with a few diced green onions.

Please note if you choose to use turkey sausage there is more fat, which you can use instead of the butter, just drain off excess over 2T.
